Spinach and Red Bell Lasagna

Spinach and Red Bell Pepper Lasagna is a delicious and easy recipe to make in the speed oven using combination bake. With ingredients like spinach, roasted bell peppers, cherry tomatoes and ricotta cheese it will easily become a family favorite.

Ingredients
2-3 quarts good quality tomato sauce, prepared or homemade 
12-9-by-4-inch no-boil lasagna noodles (about 3/4 pound)
1 box of Fresh Spinach
2 pounds ricotta cheese
3 pounds shredded mozzarella cheese (save 1 cup for top layer)
1 teaspoon Garlic Powder
1 container of bell peppers in oil (thinly sliced)
1 cup of chopped cherry tomatoes 
1 cup freshly grated good quality Parmesan cheese (about 3 ounces)
Optional: Dried parsley flakes or dried oregano

 
Directions

  1. Spread 1 cup of the tomato sauce evenly in bottom of speed oven's large glass tray. Arrange six lasagna noodles in the tray; then cover them with 1 more cup of sauce.
  2. In a medium bowl, mix spinach, ricotta, garlic powder and mozzarella together. Dollop half of this mixture over the sauce. Add thinly sliced bell peppers and chopped tomatoes. Top with 6 more noodles, sauce, and remaining spinach filling. Cover with remaining noodles. Pour remaining sauce over noodles, spreading to cover evenly. Sprinkle with the grated Parmesan cheese and mozzarella cheese for top layer. Lastly, add optional dried parsley flakes or dried oregano.
  3. Slide glass tray into speed oven. Select Combination Bake. Set microwave power to the highest at level, set the oven temperature to 350°F, and duration for 25-30 minutes. Add more time to duration as necessary until lasagna is bubbling and hot throughout.
