Recipe
Ingredients for lentils
2 cups vegetable broth
1 cup green lentils, well rinsed
Ingredients for Sloppy Joes
2 tablespoons olive oil
1 sweet onion, chopped
5 garlic cloves, minced
1 green bell pepper, diced
1 jalapeño, diced with seeds
Salt and pepper to taste
1 4-ounce can tomato paste
1 tablespoon sugar
1/2 to 1 cup white vinegar
1/2 teaspoon chili powder
1 teaspoon ground cumin
1 pinch smoked paprika
Whole Wheat Hamburger Rolls
Chips of your choice, (kettle chips are great)!
Directions
- Boil lentils in vegetable broth. Follow package directions. (The Combi-Steam oven is perfect for making the lentils too! The same package directions apply.)
- In a large sauté pan, heat oil and salt and pepper. Sauté garlic, onions, jalapeños and pepper until softened and slightly browned.
- Deglaze the pan with 1/2 cup vinegar or more, as needed. Add all other ingredients, including the lentils.
- Serve with raw onion, whole wheat rolls or your favorite chips for scooping what falls onto the plate!
