Spicy Mediterranean Chicken

We love cooking with chicken breast for its healthy, quick cooking, please almost everyone qualities. In this recipe, we use our Miele HUB with lid for a one-pot meal that is perfect for leftovers and might even reheat better than the original. It’s easy to prep and make (only 10 mins to prep and 20-25 minutes to cook), plus it’s a great recipe for a family weeknight dinner! Make a little extra and enjoy leftovers for lunch the next day. 


2 Tbsp. of Olive Oil
1 Sweet Yellow Onion Diced
1 Yellow Bell Pepper
2 Jalapenos or Chili Peppers
Pinch of Salt and Pepper
2 Tbsp. Minced Garlic or Garlic Paste
1 Tbsp. Dried Oregano
1 Tbsp. Dried Basil
1 Tbsp. Onion Powder
1 Large Can of Diced Tomatoes
1 Large Jar of Tomato Sauce 
3 Pounds of Chicken Breast (Cut into Small Pieces) 
1 Medium Jar of Kalamata Olives (Pitted)
1 Can of Green Olives (Pitted) 
Optional: Crumbled feta cheese and chopped fresh parsley


Heat the Miele Hub 62-22 Induction ready pan on number 8 (high heat). Once heated, place olive oil and sauté the onions, jalapenos, bell pepper, and add a pinch of salt and pepper. 
Once lightly brown, place minced garlic, dried oregano, dried basil, and onion powder. Use a spoon/Utensil to mix the spices into the sautéed vegetables. 
After 5 minutes of cooking, place diced tomatoes and tomato sauce into the hub. Change temperature to level 5 (Medium heat). 
Place chicken pieces and olives into the hub. Place lid on top of Hub and Cook for 8 minutes. 
Lower the temperature to level 2 (low heat) for an additional 8-10 minutes. Serve warm with optional Crumbled feta cheese and fresh parsley.
