Cranberry Brie Bites

Whether you have left over cranberry sauce from the holidays, or you choose to make a fresh batch from our recipe this is a delicious and easy appetizer to prepare. Flaky phyllo shells and brie cheese magically turn simple cranberries into something so enjoyable you can’t eat just one.


8 ounce bag fresh cranberries
1 cup granulated sugar
1 whole orange, zested
1 tsp lemon zest
1 whole clove    
1/4 tsp nutmeg     
1/2 cinnamon stick
1/4 cup orange juice
Salt to taste
15 Phyllo shells, frozen
3 ounces brie cheese


  1. Add first 8 ingredients to a medium sauce pan.  Cook over medium heat for 30 minutes, uncovered, allowing the cranberries to burst and the sauce to thicken.  Stir as needed. Start on Induction on a 7 setting and turn down to 4 once the cranberries begin to pop.
  2. Preheat the Speed Oven to 350°F on Convection Bake. 
  3. Place frozen Phyllo shells on the Speed Oven Glass Baking Tray. Cut brie into small squares and place one in each shell. Slide tray into Speed Oven and set timer for 10 minutes or until shells are crispy and browned.
  4. Once shells and cranberries are cooked, top each brie shell with a dollop of cranberry sauce. 
  5. Serve warm.
