Cornbread Casserole

Serves 8-10

This Cornbread Casserole recipe is the perfect combination of two family classics! This super simple recipe is easy, quick, and delicious. Enjoy it as a side for a family picnic or add it to your holiday favorites. This recipe is sure to be a new family classic.


1 Can of corn niblets
1 Can of creamed corn
1 Stick of unsalted butter (melted)
1 Pint of sour cream
1 Box of Jiffy corn muffin mix (or similar)
2 Eggs (beaten)


  1. Preheat oven to 350 degrees on Convection Bake.
  2. Prepare a 13x9 casserole pan by spraying lightly with cooking spray.
  3. Mix all ingredients together in the casserole pan and bake for 1 hour.
