 Cheesy Corn Pudding
Corn Pudding is a classic southern comfort food and is the perfect accompaniment for a roast or baked ham.

    • 2 cups whole milk
    • 3/4 cup heavy cream
    • 3 large eggs
    • 3 large egg yolks
    • 1 teaspoon salt
    • 1 cup grated Monterey Jack cheese
    • 2 scallions, thinly sliced
    • 3/4 cup frozen corn, thawed
    1. Combine milk and half and half in a medium saucepan. Heat until small bubbles appear around the edge of the pan. Remove from heat. In a medium bowl, whisk the eggs and egg yolks until blended. Slowly whisk the warm milk mixture into eggs, add salt. Strain the mixture into a large glass measuring cup. Distribute the cheese, scallions and corn evenly among the 3-to-4 ounce ramekins or custard cups. Pour the milk mixture into the cups.
    2. Place ramekins in two perforated steam trays. Slide into steam oven select Custom or Cook mode. Set the duration for 25 minutes, steam until the pudding is set in the center. Serve warm directly from the ramekins.
